Spaghetti Squash with Roasted Red Pepper Tomato Cream Sauce

A few weeks ago I made this super delicious recipe from one of my favorite blogs, Roasted Red Pepper Tomato Cream Sauce from Two Peas and Their Pod.  It’s super easy and super delicious!  The combination of the red pepper, tomato, creamy Greek yogurt, and Italian spices make for an absolutely amazing tangy rich sauce.

First cut the squash and roast it in the oven.  When it’s done let it cool for a few minutes and remove the flesh from the skin with a fork.

Roast the peppers either in the oven or over the gas flame.

When they’re blackened on all sides place in a bowl covered with saran wrap, allow them to cool and then peel, seed, and finely chop.

Cook some onion and garlic in olive oil over the stove and stir in the red pepper, tomatoes, and oregano, parsley, and basil.  Then add some Greek yogurt.

Stir until well combined.

Stir sauce

Put some squash on a plate, top with sauce, and serve with Parmesan cheese.

Recipe

Spaghetti Squash with Roasted Red Pepper Tomato Cream Sauce

Adapted from Two Peas and Their Pod

Serves 4

Ingredients:

Spaghetti Squash

     1 medium spaghetti squash

     1 tablespoon extra virgin olive oil

Roasted Red Pepper Tomato Cream Sauce

     3 red bell peppers

     1 tablespoon olive oil

     1 small onion – chopped

     3 cloves garlic – minced

     15 oz can diced tomatoes

1 teaspoon dried oregano

     1 teaspoon dried parsley

1 tablespoon dried basil

     salt & pepper

     1/4 cup plain Greek yogurt

Parmesan cheese – for serving

For the spaghetti squash

     – Preheat oven to 400°

     – Cut the squash in half and rub the cut sides with olive oil

     – Place the halves cut side down on a baking sheet

     – Bake for 45 minutes until the squash is tender

     – Remove from the oven, allow to cool for a few minutes

     – Scrape with a fork to remove the flesh from the skin and place in a large bowl

For the Roasted Red Pepper Tomato Cream Sauce

    – While the squash is in the oven roast the peppers, you can either place them in the oven and rotate until all sides are charred, or roast them over a gas stove turning until all sides are black, then place them in a bowl covered with plastic wrap or in a plastic bag and allow to cool, then peel the skins and remove the seeds and chop finely

     – Cook the onion and garlic in olive oil until soft (about 5 minutes)

     – Add the red pepper, tomatoes, and spices, simmer the sauce for about 20 minutes

– Stir in the yogurt

–  Serve the squash on a plate and top with sauce and Parmesan cheese as desired

 

 

 

 

Chocolate Mayonnaise Cake with Peanut Butter Icing

Soooo, it’s my birthday!!!  And what better way to celebrate than with a decadently delicious cake?  This chocolate mayonnaise (yes, I know it sound weird, but I promise it just makes the cake super moist and rich and yummy) cake with a homemade peanut butter butter icing.

Not only is it delicious but it’s super easy to make.  First you mix sugar and cocoa powder.  Then you dissolve baking soda in water and add it to the sugar mix.

Then you add some flour and mayo.

Beat it until it’s well combined and pour it into a greased baking pan and put it in the oven.

You make some frosting (which I don’t have process pictures for because I got as little excited about the prospect of eating spoonfuls of peanut butter icing… oops) by beating together butter, peanut butter, vanilla, powdered sugar, and milk.  After the cake cools spread the icing over the cake.  And cut a big piece.

And pour a giant glass of milk and enjoy the decadent chocolate peanut butter deliciousness.

Amazingly delicious, chocolate and peanut butter are a match made in heaven and this cake is a shining example of that, make some for yourself and try it today, you’ll thank me, I promise.

Recipe

Chocolate Mayonnaise Cake with Peanut Butter Icing

Yields 1 – 13 x 9″ cake

Ingredients:

Cake

     1 cup sugar

     4 tablespoon cocoa powder

      2 teaspoons baking soda

     1 cup water

     2 cups flour

     1 cup mayonnaise

     1 teaspoon vanilla

Icing

     1/4 cup butter

     3/4 cup peanut butter

     1 teaspoon vanilla

     1 pound powdered sugar

     1/4 cup milk


For the Cake

     – Preheat oven to 350°

     – Combine the sugar and cocoa powder in a large bowl

     – Dissolve the baking soda in the water, add to the sugar mixture

    – Add the flour, mayonnaise, and vanilla to the sugar mixture and beat until combined

     – Pour into a greased 13 x 9″ pan

     – Bake for 30 minutes

     – Allow the cake to cool

For the Icing

     – Cream together the butter, peanut butter, and vanilla

     – Alternate adding the powdered sugar and milk until well combined

     – After the cake has cooled spread the icing over the cake
